Cuvée Federico Classic Method
In the vineyard
Vineyards cultivated at between 300 and 350 metres above sea level on calcareous-clayey soils. Harvested at the beginning of August.
In the cellar
Vinification begins with the pressing of the whole bunch, from which the free-run juice is preserved. This is followed by fermentation in temperature-controlled stainless steel tanks, where it matures. The wine is bottled together with the "liquer de tirage" to start the second fermentation. The bottles are placed in a pile to age for 36-48 months. Disgorgement takes place by the “à la glace” method, with the addition of the "liquer d'expedition".
Pale lemon-green colour, with a numerous perlage and good persistence. Lively and fine bouquet of citrus fruits and Mediterranean scrub, accompanied by hints of bread crust and hazelnuts. The taste is refreshing, with a marked acidity where notes of citrus emerge. Light, savoury and persistent
