Harvested at the end of August

In the cellar

Pressing and maceration at low temperature, followed by soft pressing and fermentation at controlled temperature in stainless steel. Maturation in stainless steel from 6 months to one year, depending on the vintage, followed by ageing in the bottle for 3 months.
